Vegan sushi is one of my favorite meals, so many veggies packed into one place. Up your game by making it even easier and throwing it in a bowl! Drizzle on your sauce and it's the ultimate meal.

How to Make a Vegan Sushi Bowl

Seriously the easier the better when it comes to healthy meals, and you can't get much easier than meals in a bowl. Plus, this helps with picky eaters because they can add whatever they like!

To make this delicious vegan sushi bowl, decide on the base you want (it can be rice, quinoa, etc) and pick your toppings.

Ingredients

To make this healthy sushi bowl recipe you will need:

  • Sushi rice
  • Shiitake mushrooms
  • Tofu
  • Avocado
  • Cucumber
  • Carrot
  • Green onion
  • Radishes
  • Cilantro
  • Tamarior soy sauce
  • Spicy Cilantro Sauce

As I mentioned, this recipe is so easy to make! It's basically and dump, drizzle and eat situation.

This dish is incredibly customizable, you can use essentially anything you want.

If you don't want to use sushi rice for the base, try:

Prep Ahead Tips

This makes a great meal prep recipe!

  • Cook the rice, mushrooms, and tofu ahead of time.
  • Chop up the raw toppings (minus the avocado to avoid yucky browning).
  • Store the cooked and raw ingredients in separate airtight containers in the refrigerator for up to 3-5 days.
  • When you're ready to eat, reheat the warm ingredients and top with your flavors of choice.

Ingredients

  • 4 cups cooked sushi rice , see note

Cooked toppings

    Mushroom:

    Tofu:

    • 16 ounces firm tofu , cut into cubes
    • 2 tablespoon Tamari , soy sauce for non gluten-free
    • ¼ cup corn starch

    Raw toppings

    • 1 avocado , sliced or cubed
    • 1 cucumber , cut into matchsticks or sliced
    • 1 carrot , cut into matchsticks or sliced
    • ½ cup sliced green onion
    • 4 radishes , sliced
    • cilantro , for garnish

    Serving suggestions

    • Tamari , soy sauce for non gluten-free
    • Creamy Peanut Sauce
    • Spicy Cilantro Sauce

    Instructions

    • Make the crisp tofu by combining tamari and cornstarch to make a slurry. Coat the tofu with it in a bowl. Spread onto a parchment lined baking sheet.

    • Combine the mushrooms with the Tamari in the bowl. Spread onto the baking sheet.

    • Bake at 400 for 20-25 minutes until crisping on edges. Check the mushrooms at 15 minutes and remove so they don't burn.

    • Mix the cooked mushrooms with about half of the Spicy Cilantro Sauce. You can use as much or as little as you want. Use the rest to drizzle on top of the sushi bowl.

    • Separate the cooked rice into 4 bowls.

    • Build the bowls by adding toppings.

    • Drizzle sauces over the top, garnish and serve!

    Notes

    • Sushi rice is traditional but you can use any rice you prefer.
    • Add any toppings that you want, this is fully customizable!

      This was delicious! Mixing the mushrooms with the spicy cilantro sauce was genius. Pretty dang close to actual sushi (from a texture perspective). For some reason, i didn’t see the link your spicy cilantro sauce so I made my own, but can’t wait to make yours. Also, underneath all the goodies I added some kale/chard to get some more greens it. One of my new favorites!!
