What ingredients do I need to make an authentic Fettuccine Alfredo?

I always suggest using the highest quality ingredients you can find for simple dishes like Fettuccine Alfredo. The authentic version only uses 4 ingredients, so high quality ingredients will make the dish even more delicious!

  • Pasta: My two go-to brands for dried pasta are Dececco or Seggiano.
  • Butter: My favorite butter is Kerrygold unsalted butter. The quality is phenomenal! I like to buy mine from Costco and freeze what I won’t need (butter lasts in the freezer for 5 months).
  • Cheese: I like to always have a wedge of high quality cheese in my refrigerator – I don’t like using pre-grated cheese because they contain preservatives to keep the shreds from clumping. For this recipe, I used the 24 month aged parmesan cheese from Costco.

Use the pasta water to create a creamy Alfredo sauce

Pasta water is the secret ingredient to the best pastas. When you cook your pasta in salted water, what’s left over is the salty, starchy water. This water (which Bon Appetit calls “LIQUID GOLD”) is what emulsifies with the fat in your sauce (oil, butter, cheese, etc) and creates that incredibly smooth sauce.

My #1 tip with pasta water is DO NOT ADD IT DIRECTLY FROM THE POT. It’s going to be too hot – the higher temperature of the water will melt the cheese too fast and create a clumpy sauce! Reserve your pasta water in a separate measuring cup and aim to have it at 150-160F or about 70C before adding more to the sauce (1-2 minutes of resting). I like to use this infrared thermometer to easily measure the temperature of the water.

This authentic Fettuccine Alfredo is one of my favorite comfort foods! You only need a few ingredients and technique to make this ultra creamy dish at home in 20 minutes or less!

Ingredients

  • 8 oz fettuccine noodles
  • 3 oz aged parmesan cheese, finely grated
  • kosher salt, for the pasta water
  • 5 tbsp butter
  • 1 cup pasta water, reserved after cooking the noodles

US CustomaryMetric

Instructions

  • In a large pan, melt butter over medium heat until fully melted, then immediately turn off the heat.

  • In a large pot of salted boiling water, cook your fettuccine to al dente or until desired doneness.

  • 1-2 minutes before the pasta is done, reserve a cup of pasta water and set aside to cool. Ideally, you want the temperature of this water to be around 150-160F or 70C (use a thermometer for better accuracy).

  • Once the pasta is cooked to your desired doneness, immediately transfer to the butter and add 1/3 cup pasta water and your cheese. Stir vigorously (still off the heat), adding pasta water as needed, until a creamy sauce is achieved. Adjust seasoning for salt to your preference.

  • Serve immediately in a warm bowl with additional parmesan and optional freshly cracked black pepper and enjoy!

Notes

My #1 tip when using the pasta water to make the cream sauce is DO NOT ADD IT DIRECTLY FROM THE POT. The water is going to be too hot, and the higher temperature of the water will melt the cheese too fast and create a clumpy sauce! Reserve your pasta water in a separate measuring cup and aim to have it at 150-160F or about 70C before adding more to the sauce (1-2 minutes of resting). I like to use this infrared thermometer to easily measure the temperature of the water.

FAQs

What is the original Alfredo sauce made of? ›

Real alfredo sauce is made with 3 simple ingredients: butter, Parmesan cheese and fresh fettuccine pasta. There is absolutely no cream in this dish (cream is common in most American-style alfredo sauce recipes). Make this dish with my fresh homemade pasta, fresh sourdough pasta or store-bought fresh pasta.

How to make homemade alfredo sauce without heavy cream and flour? ›

One of the easiest ways to substitute heavy cream in Alfredo sauce is to use a thickener + milk. We chose corn starch + milk because it gives that same creamy texture without the fattiness that heavy cream brings. The corn starch also allows you to thicken your Alfredo sauce recipe with milk and no flour.

What can you substitute for heavy cream in alfredo sauce? ›

By using a roux as the base for this simple sauce, milk can be added in with Parmesan cheese and still create an incredibly creamy sauce, even without heavy cream. Making my homemade alfredo sauce with regular milk is the best way for me to do it because I always have these simple ingredients on hand.

What can I add to fettuccine alfredo to make it taste better? ›

You could just add garlic powder, sure, but quickly sautéeing fresh garlic while your pasta cooks is a great way to layer flavor. Resnick likes to add spinach as a way to cut the richness of the sauce. Add a tablespoon or so of olive oil and a few cloves of minced garlic in a sautée pan over medium heat.

Do real Italians use alfredo sauce? ›

What we call alfredo sauce here in the US doesn't exist in Italy. Its closest cousin is similar to di Lelio's invention: a sauce known in Italy as “al burro” (with butter) — pasta served with melted butter that's sometimes infused with fresh sage, as well as grated Parmigiano.

Does authentic Alfredo contain cream? ›

To each their own, but no authentic fettuccine Alfredo recipe should include cream (because it dulls the flavor of the cheese).

What is a good substitute for heavy cream in pasta? ›

Whole milk is an excellent substitute for heavy cream. It adds richness to your pasta sauce without the excess fat. Simply simmer your favourite pasta sauce with whole milk until it thickens to your desired consistency. The result is a velvety and indulgent sauce that pairs beautifully with pasta.

How do you thicken Alfredo sauce without cream? ›

Add Cheese

This first method is not only the easiest, but also arguably the most delicious. The key ingredient in Alfredo sauce is cheese—generally Parmigiano Reggiano—and lots of it. To thicken Alfredo sauce, simply add more cheese than the amount called for in a recipe until you achieve the consistency you want.

Why do they put nutmeg in Alfredo sauce? ›

The reason behind this is simple; cream sauces tend to lack flavor and feel a bit heavy due to the fat content. Nutmeg is a simple way to warm up the sauce with a subtle, spice flavor that won't overpower it. Like with béchamel, you only need a pinch of nutmeg in your alfredo to improve its flavor.

What is authentic Alfredo called? ›

Fettuccine Alfredo is an Italian pasta dish consisting of fresh or dried fettuccine tossed with butter and Parmesan cheese until it emulsifies, creating a rich, creamy sauce. In Italy, it is called fettuccine al burro, fettuccine al burro e parmigiano or pasta al burro e parmigiano.

What mother sauce is Alfredo made from? ›

Bechamel is a white sauce, made of flour, butter and milk. It's typically the base for Alfredo sauce or white country gravy.

Who made the first alfredo sauce? ›

National Fettuccine Alfredo Day is observed annually on February 7th. Alfredo di Lelio, an Italian restaurateur, created Fettuccine Alfredo in 1908. After his wife had given birth to their first son that year, she did not have an appetite. To help encourage her to eat, he created a dish of noodles, cheese and butter.

What is the difference between alfredo sauce and fettuccine sauce? ›

Both sauces are dairy-based, but White Sauce is thickened with a roux made with butter and flour while Alfredo Sauce uses heavy creamy and is thickened by reduction on the stovetop and not with a roux.
